Onions, peeled, cut in half, roasted in the oven with the chicken, can be a wonderful side dish drizzled with a bit of olive oil and some salt and pepper. I made these last week for a gathering of friends – a simple Sunday Chicken roast-off. Foods that show off in their simplicity – roast chicken stuffed with apples, roasted onions with potatoes fried in the chicken drippings. Creamed spinach with nutmeg and sherry. some sauteed mushrooms (six kinds) with butter and sage.
The onion caramelizes just sitting there! And its simplicity reminds me not to push too hard. Not to work too hard. Not to embellish life too much. To let things be what they are is enough.
I love food which shows itself off. Just the onion, baked on a Teflon pan for a while with the chicken is enough.
What other aspects of life might need less work? Might show off as themselves just fine?
